Guest Blogger: Week Six

Hello everyone my name is Cortnee. I am a full time student, mother, wife, and substitute teacher. I have two boys they are age 8 and 6. We love to be outdoors, we are always fishing, camping or anything that has to do with being outside. I have never done a blog before so when Christina asked me I thought it would be a great experience, and fun to do. I have not personally met Christina but my husband works with her husband on Fort Campbell. I am more then happy to help in any way that I can for their family. I had a hard time coming up with what to write for this blog. I have recently been on the journey to lose weight. I have currently lost 40 pounds and I thought what better way to help by posting one of my favorite recipes. I am a huge comfort food lover and love football season so I thought I would post my comfort chili recipe. This recipe is a healthy alternative, everything in it is low in fat and really healthy. 

Cozy Comfort Chili

Ingredients 

1 Celery stalk
1/4 onion 
1/2 bell peppers
2 garlic cloves 
assorted spices to taste
1 tsp olive oil
3 oz ground 95% lean beef 
7 oz diced tomatoes with juice
1/4 cup black beans
1/4 cup pinto beans
1/4 cup kidney beans 
1 oz of cheese cheddar low fat or fat free

Directions 

In a large skillet over medium heat, saute garlic, onion, celery, or bell pepper with your favorite spices in oil. 
Add ground beef and cook through. Stir in diced tomatoes with all of the juice, black beans, pinto beans, and kidney beans. Stir together and cook until bubbly. 
Top with shredded cheese. Tip: 1 oz. shredded low fat cheese is 1/4 cup

This chili is really good, and I am so happy that I get to share this with others. This amount is made for one person so you can always double your amounts to fit the needs for your family. I hope that you all enjoy this recipe. Both of my boys who sometimes are picky really enjoyed this as well. I loved doing the blog this week, enjoy!
